BLENDER BREAD (RECIPE FROM AGAINST ALL GRAIN)
It just came to my attention that the Blender Bread recipe in my Celebrations cookbook has a measurement typo. Thankfully, the loaf still works with the way it was printed, but it does come out a lot more squishy and dense because of it. For those of you who don't have a copy of the book yet, you're in luck, because I'm sharing the correct recipe here on the blog! As I mentioned the other day, I still prefer my Sandwich Bread recipe from my first book Against all Grain , but this one requires a lot less dishes and time so we make it more frequently. It works well toasted for a BLT sandwich, for almond butter and jam sandwiches, french toast, or even a panini.
You can rate this recipe by giving it a score of one, two, three, or four forks, which will be averaged out with other cooks' ratings. Here's the moment you have all been waiting patiently and some not so patiently! It's moist on the inside with a slight crust on the outside, has an amazing texture and taste when toasted, and can also be used straight from the fridge with some almond butter and jam. To achieve the moist white bread texture that you often miss with the use of almond flour or almond butter, I used raw organic cashew butter and beat the egg whites separately.

That's why I'm excited to share this grain-free, gluten-free sandwich bread recipe, that uses whole cashews, fiber-rich coconut flour and just a handful of other ingredients. And it's so easy to make — just put everything into a blender, blend, and bake! Blender Bread recipe from Against All Grain.
